Spring Pasta Salad

Are you looking for that yummy Spring salad that isn’t boring and is quick to prepare?  Boy do I have a treat for you!!

1 can Albacore tuna in water                                1/2 bag frozen baby peas, thawed                  5 slices of hickory smoked ham (thick) diced    2 bags farfalle pasta cooked al dente           2 stalks celery thin sliced                                      6 hard boiled eggs chopped                             5-6 mini peppers fine dice                                    1/2 can chopped black olives                           2-3 T sweet relish                                                    1/2 jar pimento                                                   1/3 c chopped green onions                                  1/3 c heavy cream beaten stiff                         1/2-3/4 c Dukes Mayo                                              3-4 T Zatarans Mustard                                      6-10 dashes Slap Yo Mama                                   Salt and Pepper to taste                                      Parsley to garnish

The prep work is the only real work involved in this super yummy dish!

One important note, mix the heavy cream, mayo,  mustard, and seasonings all together then fold gently into the pasta ingredients.  This ensures even distribution of all seasonings while keeping your pasta from breaking into tiny pieces.

When all ingredients are carefully combined, sprinkle with parsley and you have a beautiful but more importantly flavorful dish to share…. or not!

A few things to be careful of.  Make sure the pasta is truly al dente (or chewy).  If not, your pasta salad will end up looking more like baby food.

The heavy cream is the secret weapon here to a creamy delicious salad that isn’t drowning in mayo flavor.  It adds a silky texture and great moisture without changing your flavor profile at all!!!  You will want to keep this in your arsenal any time you need to boost the creaminess of a dish!!

Lastly, if you prepare this a day ahead, please note that the pasta will “soak” up a lot of the moisture so be prepared to add a little more of your “dressing” ingredients the following day to preserve your creaminess.
